EDIT:
I have found that Dolphin stores file associations in /root/.config/mimeapps.listInteresting. So, if I pre-populate that file with all file associations, then Dolphin will read that.

Dear Barry, thank you for your attention. Unfortunately after updating the system, the list of available apps is empty and if I double click a file, the type of which had been previously associated with an application, nothing else happens other than Dolphin showing me the empty list:
Here for example I've just double clikcked the file md5sum.txt. The same happens for all other associations which had been already set system-wide (for example double clicking jpg images does not call GpicView, even if the association is listed under root/.config/mimeapps.list). Basically, it looks like the system as a whole cares about the file root/.config/mimeapps.list, but not Dolphin itself.
It looks like the only way to restore correct Dolphin operation is either reinstalling the 3 packages I cited before or re-executing the brief procedure I found out.
