What's the name of the Screencast Creator "Screencaster" repository that is listed in the menu under "Multimedia"?
I am not able to find the package in the gslapt package manager.

It's a core script, a part of fatdog-scripts package.

Is there a specific reason that this is not a separate repository?
Because it was originally a one-script front-end to ffmpeg maintained by the same person who maintained the rest of the Fatdog. There was not much point to separate all these individual scripts into their own individual packages; it's just more administrative overhead for the said person who was already in difficulty to find free time to do more productive things
