Change info of OS and phonenumber that webpages can see?

So, I noticed some webpages manage to see info on what OS I use.

Can they also see kernel version?

When using a friends computer there was even a webpage that could see his phonenumber connected to his modem, which was a smartphone.

So I assume the webpages read this information from some file somewhere.

Is it possible to change this information / text / file, so that there is other information there. I.e. trick or fool the webpages one visits, so that they think I am using for example windows 10 or 11 or whatever the latest version is? Same with phonenumber connected to modem?

You can switch the user agent (e.g. by adding an extension to your browser).
