I plan currently to buy RPi5 (version with 8GB of RAM).
My second toy will be URVE Pi, but currently is not available (out of stock). If I manage to buy this Polish Pi - maybe I will make my own Puppy distro ;)

Soon, every country in Eastern Europe will have its own Raspberry (with blackjack and whores :) )
Up to this point, I only knew about the Bulgarian company Olimex (OLinuXino comp series).
There is also a Russian version of Raspberries. Turnip aka Repka Pi, one of the subspecies :)

The RPi5 with 8GB RAM should give you plenty of power for your needs. It’s a bummer the URVE Pi is out of stock, but if you get it, creating your own Puppy distro sounds like a rewarding challenge. Good luck with both! :thumbup2:
