I run the easy buster os without enbaling encryption.How do i re-enable it, and, don't make its password as my root password(make it a independent password)

Unfortunately, you can't.
Fscrypt can be turned on for a partition, however, it works on a per-folder basis and the folder must be empty beforehand. After the first bootup, the folders in the working-partition won't be empty.
I always boot with a password and fscrypt. Reckon it is a minor inconvenience, considering the security if anyone stole any of my usb-sticks.
The decryption password entered at bootup is also applied to users 'root' and 'zeus', which is good, so you are not using the "woofwoof" password for root that everyone knows.
