If you don't like Ventoy, YUMI has Ventoy under the hood and can do some cool tricks. You still need to do the "Ventoy Hack" though.

On a wild hunch, I tried replacing those 2 files on a Rufus-Created BookwormPup64 USB drive and for the first time ever IT GAVE ME A CHANCE TO ENROLL THE MOK key (the "cer" file, right?) It seems you can also replace the shim with one from another package and then rename stuff and reinstall MOK keys and ... A lot of trouble, but safer than turning off secure boot. I didn't try it.
