I offer this: My oldest PC is a 2007 64bit which is the 2nd year of all manufacturers upgrading, as you will remember. ALL of them boot a GPT-based USB/disk without issue. And we know the benefits. Not sure why to insist MSDOS as this ...

Progress. More corrections of the ventoy grub cfg file and an advance in the progress of the boot before it failed. It was working toward the Easy of the sata ssd, but it didn't work out/ find it properly.

It got to: working partition sdb1, but it wasn't finding what it wanted ...

Install EasyOS on the SSD and create a grub menu entry for it on the Ventoy stick.

For example gnome-disk-utility (available in the Daedalus repository) can create and restore disk and partition images. Maybe you could try creating a partition image of the ext4 partition on the stick and restoring it to the ssd partition and see if that works?

This time we replace completely the content of the second partition by the initial content of the second partition in the Scarthgap version (initial content = the 3 usual files vmlinuz, initrd, easy.sfs)
We do not modify the first partition

I tryed other thing.- I change the name of scarthgap to "easyescarthgap" and mantein easyos for daedalus.
It start booting but when I should choose language, it hangs on.-

EasyOS requires a partition with ext4 filesystem.

Firstly considering GRUB4DOS. Where it is installed, you will find a file 'menu.lst'. Insert something like this:

title EasyOS Dunfell (partition sda3 folder easyos)
find --set-root uuid () 054a04b8-0f00-11ed-aeb9-287fcfeb4376
kernel /easyos/vmlinuz rw wkg_uuid=054a04b8 ...

if the empty space at the beginning of your disk is considered the first partition.

Did you reformat the first partition as ext4 (for example #mke2fs -t ext4 -O ^has_journal /dev/sdb1 if the flash drive is sdb) and then copied the easyos folder and the bootx64.efi and limine.cfg files from the easy.img to the first partition as follows:
